
Speedy Hummus
With grilled veg and Dukkah
This is one of my quick go-to meals. Super quick, tasty and nutritious! The recipe consists of three elements that all have room for experimentation. Try to add different fresh herbs or spices to the hummus. I like to add fresh parsley for example. For the grilled veg, use whatever is in season and you can get your hands on. The Za’atar really is the hero here. The dukkah you can also play around with!
Ingredients
In total around 1500 g of different vegetables, for example (sweet) potatoes, cauliflower, beetroot, celeriac, carrot or parsnip
3 tablespoons Za’atar (or mix up thyme, oregano, sumac, marjoram and sesame seeds)
1 tablespoon ground cumin
3 tablespoons balsamic vinegar
2 tins chickpeas (400 g)
6 tablespoons tahini
2 cloves garlic
Juice of 1 lemon
2 teaspoons salt
1 teaspoon cumin
150 g mixed nuts
1 teaspoon each of cumin seeds, koriander seeds, fennel seeds and sesame seeds.
Salt and olive oil

Method
Preheat the oven to 230 C. Chop up all your veg to whatever size you prefer. I quite like to keep things chunky. Mix up the veg with olive oil, salt, pepper, the Za’atar and ground cumin. Spread onto a baking tray (make sure not to make it too cozy on the tray, or use two trays so everything can get nice and crisp!) Then place in the oven for around 20 to 25 minutes, or until golden and crispy.
In the meantime, start by making the Dukkah. Toast the nuts and spice seeds in a pan with some olive oil and a good amount of salt (taste!) until they start to get poppy, smelly and lightly golden. Transfer into a food processor and blitz up shortly. Put aside into a bowl.
To prepare the Hummus. Drain and rinse the chickpeas and wack into a food processor with the tahini, garlic, lemon juice, salt, cumin, around 80 ml water and optionally a bit of olive oil. Blend until nice and smooth and add some more water if needed. Always taste for seasoning to see if you like it!
When the vegetables are ready, take them out of the oven and immediately drizzle over the balsamic vinegar. Time to plate up, however you like! Santé.
