Easy peasy

A super super easy dessert that will blow your dinner friends minds! Combining the savoury flavours of herbs with the sweetness of seasonal fruits works extremely well, for example in this tarte tatin. There is really decent prefabricated puff pastry around, which makes this dish quick to make. Change things up by using different fruits, for example apricots, peaches, nectarines, pears etcetera etcetera. If you really want to make things cheffy, try and make your own vanilla ice cream!

Ingredients

Around 10 medium-large plums

4 tablespoons sugar

1 tablespoon thyme

50 grams butter

1 roll of fresh puff pastry (try to find a circle shaped)

1 egg

A handful of almond slices

Vanilla ice cream

Plum and thyme tarte tatin

Method

Preheat the oven to 200’C. Start by taking out the stones from the plums, by halving and twisting it. Then slice all the halved plums in thin slices. Grease your baking dish with some oil or butter, then sprinkle over the sugar and thyme. Lay the plum slices on top of this and distribute small peaces of butter in-between the plums. 

Then, cover everything with the puff pastry and tuck in around the sides. Whisk up the egg and brush it on top of the pastry. Then bake in the oven for around 20 minutes, or until nice and golden. In the meantime, toast the almond slices. When the Tarte Tatin is ready, flip it around on a plate, sprinkle over the almonds and top with vanilla ice cream. Bon appetit!
