Korean Fried Shrooomzz Bao's!

with salad, pickles and lime-peanut dressing

Oozy, tangy, spicy & simply delicious! These Bao’s will get your people mouthwatering every time you make it! If you want to go all out and have some fun, try making your own bao’s. For the more quick and comfy version, try your local Asian supermarket, they will have great bao’s too! Swing on the kitchen album and lets get cookin’.

Ingredients

Gochujang sauce:

4 Tbsp honey or agave syrup

4 Tbsp brown sugar

3 Tbsp tomato ketchup

2 Tbsp Gochujang paste

2 Tbsp soy sauce

2 Tbsp mined garlic or garlic syrup

1 Tbsp sesame oil

 

KFS:

300 grams of oyster mushrooms

2 Tbps vegetable oil

2/3 cup of corn starch

2 Tbps mirin (optional)

0.5l vegetable oil to fry in (if deep frying)

 

Toppings:

1 carrot

pickled cucumber (look up a recipe online, it’s simple)

Crispy fried onion

Crispy chili oil (Lao Gan Ma is the best)

 

Salad:

Veggies of choice, for example:

Taugé

Red bell pepper

Carrot

Edamame beans

Cucumber

 

Lime-peanut dressing:

5 Tbsp peanut butter

2 Tbsp rice vinegar

Juice & zest of 2 limes

2 Tbsp soy sauce

1 Tbsp sriracha/sambal

1 Tbsp sesame oil

Method

Start by making a classic gochujang sauce, in which the mushrooms will be coated, by mixing all the ingredients and let it boil for a a minute or so.

While steamin your bao buns in a steamin basket on top of a pan with boiling water, take the oyster mushrooms (shiitake would also work) and coat them in a mixture of some oil, corn starch, and – if you have it – mirin. After als the mushrooms are evenly coated. Fry them in some vegetable oil, untill golden brown. If you wanna go for a more healthy version, the oven (20m @220c) or airfryer (12m @200c) also works. Let them rest for a few minutes an a cooling rack, or kitchen paper, and toss them in the gojuchang sauce. Evenly coat the mushrooms and sprinkle some sesame seeds on top.

For the garnish, cut up some carrots and make some pickled cucumber for under the mushrooms. Also make a mixture of crispy fried onions and crispy Chili oil, to sprinkle on top!

As a side, serve it with a salad of chopped veggies (you can basically use everything you like) with a lime-peanut dressing (easily combine all the ingredients and mix well) and dig in your Korean Fried Shroooomzzz!
